STEP 1
In a large mixing bowl, whisk together the all-purpose flour, whole wheat flour, baking powder, and baking soda. Add the blended cottage cheese and stir until a shaggy dough forms with no dry streaks remaining.

Transfer the dough to a lightly floured work surface and knead for about 4 minutes, adding just enough flour (up to ¼ cup) to keep it from sticking. The dough should become smooth, soft, and easy to handle. Cover and let rest for 10 minutes, or refrigerate overnight for even better flavor.

Preheat the oven to 375°F. Line a large baking sheet with parchment paper.
