Directions
STEP 1
Pat the chicken wings dry with paper towels. In a large bowl, whisk together all the dry rub ingredients. Add the wings and toss until evenly coated.
STEP 2
Line a large baking sheet with parchment paper and arrange the wings in a single layer, leaving space between each piece. For even crispier skin, let the wings rest for 30 minutes to 1 hour, if time allows.
STEP 3
Preheat the oven to 425°F. Bake the wings for 50 minutes, flipping them halfway through, until golden brown and crispy.
STEP 4
While the wings finish baking, prepare the glaze. In a small saucepan over medium heat, combine all of the Honey-Berbere Glaze ingredients. Whisk until smooth and simmer for 2–3 minutes, or until the glaze is glossy and slightly thickened.
STEP 5
Transfer the hot wings to a large bowl and toss with the Honey-Berbere Glaze until evenly coated. If desired, reserve any extra glaze for drizzling over the finished wings.
STEP 6
For an extra sticky, caramelized finish, return the glazed wings to the oven for 3–5 minutes, or broil on low for 1 minute, watching closely to prevent burning.
STEP 7
Garnish with sesame seeds and chopped chives or fresh cilantro, if desired. Serve immediately.
